Super Bowl Grub...

I know the Super Bowl is over, but I wanted to share with you what I made to take to our friends' party.
I decided to take appetizers because I love them and I NEVER get to make them.

The first appetizer was tortilla roll ups. I made two versions of them. Brad requested these. Our friend Kristy makes these all the time. They are Brad's favorite. In fact, for a shower gift she gave me a recipe box full of recipes, which made me jump for joy because she is a phenomenal cook. Anyway, this was one of the recipes she included and on it she wrote "Brad's favorite". I'm serious. He could founder on these suckers.

Tortilla Pinwheels #1...
1-8oz pkg. cream cheese
4 tsp. dry Ranch mix
1 pkg. dried beef, chopped
1/2 C. chopped broccoli
1/2 c. chopped cauliflower
1/4c. chopped onion
flour tortillas
In mixing bowl, combine cream cheese and ranch. Stir in all other ingredients. Spread over tortillas. Roll up and wrap in plastic wrap. Refrigerate for about 2 hrs. Cut into 1/2 in. slices.


Tortilla Pinwheels #2...
1-8oz pkg cream cheese
4 tsp. dry ranch mix
1 pkg. dried beef
kosher dill pickles
flour tortillas

In mixing bowl combine cream cheese and ranch mix.
Spread thin layer over tortilla. Place about 4 dried beef slices on top of cream cheese mixture. Spread another layer of cream cheese mixture. Line pickles up from edge to edge of tortilla. The roll tightly. Wrap in plastic wrap. Refrigerate for about 2 hours then cut into 1/2 inch slices.


"Little Smokies with Bacon"...
1 16 oz pkg Little smokies
1 pkg bacon
1c. brown sugar.
Cut each bacon slice into 4 pieces. Wrap each link with a piece of bacon. Secure with a toothpick. Place in a 9x13 pan. Sprinkle evenly with brown sugar.
Bake for 30-35 minutes @ 400 degrees or until bacon is crisp and sugar is melted.
