Mock German Chocolate Cake...

Brad's favorite cake is German Chocolate Cake.
Normally I just buy the box mix and icing, but when I ran across this recipe, I thought I would give it a whirl.
It was very good. Very moist.
The only thing I would change is the icing.
It made such a thick cake and the recipe didn't make enough icing to "fit the cake". It was too thin for my liking. So, next time I make this, I am going to double the icing recipe.
1 C. butter
2 1/2 C. sugar
2eggs
3 c. flour
1/4 tsp salt
2 tsp baking soda
2 T cocoa
2 C buttermilk(if you don't have any add 1 T. vinegar to just under 1 C whole milk...I always do this because I never have buttermilk)
2 tsp vanilla

Combine butter, sugar and eggs and beat until fluffy. Combine dry ingredients and add to creamed mixture, alternating with buttermilk. Beat well and add vanilla. Bake at 350 for 30-35 min.

Topping:
1 C. sugar
1 heaping T. flour
1C. evaporated milk
1 C. shredded coconut
2 unbeaten eggs
1 T. butter
1tsp. vanilla
1C. chopped pecans

Cook sugar, flour milk and eggs in saucepan until thickened. Remove from heat and add vanilla, nuts and coconut. Mix well and spread over top of cake while still warm.
