Cheesy Potato Soup...

Since the weather here is frigidly cold again, I thought I would share my All Time Favorite Soup with you.
Well, maybe it isn't frigid here. It's in the high 30's, but after almost 70 degrees yesterday, it feels frigid.
Back in the day, when I use to work...before kids...I would occassionally eat at this cozy little diner in the small town that I worked in. I saw Potato Soup on their menu and my stomach started growling for my MIL's cheddar potato soup. What I got wasn't what I was craving, but potatoes and water.
No joke!
It was THE WORST soup I have ever had.
I get the chills just thinking about it!

So, here you have it folks.
My MIL's Cheddar Potato Soup recipe.

Slice carrots and cube the potatoes and bring to a boil.
Once tender, drain...

Next melt margarine.
Then make white sauce by adding flour, milk, Worcestershire sauce, celery salt, onion flakes, salt and pepper....


Once that starts to thicken...
add the remaining milk.


Then add the cubed velveeta....



and stir until melted....
Once the velveeta is melted, you can add the veggies and simmer until ready to eat...I mean devour.



Yum! This is the ideal comfort food....
Cheddar Potato Soup
6 peeled and cubed potatoes
2 c. sliced carrots
1/2 C. margarine
1/3 C. flour
5 C. milk
2 Tblsp. Worcestershire sauce
1/4 tsp. celery salt
1 tsp. onion flakes
salt and pepper to taste
1 1/2 c. cubed velveeta
Melt the margarine.
Stir in flour, 1 c. milk, Worcestershire sauce, celery salt, onion flakes, salt, and pepper.
Once the mixture starts to thicken, add the remaining 4 c. of milk.
Then add the velveeta. Stir until melted.
Drain the potatoes and carrots, then add them to the soup.
Simmer until ready to serve.
Enjoy!!

  4. Mmmmm....I love that recipe of Colleen's too - made it several times this winter. I usually make it after Christmas and throw in some of my leftover ham. YUM!!!!

  7. That looks so good! I was just thinking yesterday (as I cooked a dinner whose description said, "Perfect for a warm summer evening) that maybe it is still "soup weather. Guess I'm in denial. :)
