I mean love, love, love them!
So, after I made the sweet potato bread, the wheels in my little noggin began to spin.
I wanted to try a sweet potato cake recipe.
I found one on cooks.com and gave it a whirl.
It did NOT disappoint!
It was delicious....and that is a bit of an understatement.
If you make this cake, you will be talked about for generations. In a good way. I promise.
You may possibly be forced to make this for every get together you attend for the rest of your life.
The only thing I did differently was I sprinkled crushed pecans on top of the icing.
I know, I am such a rebel.
Sweet Potato Cake
1 pkg. yellow cake mix
4 eggs
3/4 c. sugar
dash of nutmeg
1 tsp. cinnamon
1/4 c. water
1/2 c. oil
1 c. mashed sweet potatoes
Mix ingredients well. Bake at 325 degrees for 35-40 minutes or until it passes the toothpick test, in a 9x13 pan.
Icing
3 oz. cream cheese
1 stick butter
1 lb. powdered sugar
1 tsp vanilla
milk
Combine ingredients and add just enough milk to make icing of spreading consistency.
Allow cake to cool the spread over top.
Sprinkle chopped pecans on top of icing if you so choose.
Enjoy!
