Freezin' Broccoli...

Our garden is producing lots of broccoli and I love it!

Broccoli is so easy to freeze.  I wish everything could be that way!

Select broccoli with compact heads, like this one...
Now, I like to do all my trimming right in the garden.  I cut the broccoli head off with pruners.
Then I pluck away the leaves.  Next, I cut the broccoli in to medium-size sections.

I just throw all of this unwanted stuff right back onto the garden so that the nutrients go right back into the soil...
and that is one less mess I have in the house!

If you are going to do a lot of canning, I highly reccommend purchasing this book...
It will tell you everything you need to know about canning and/or freezing.

Soak the florets in hot salt water for 30 minutes.  I add about 1 cup of salt per gallon of water.
If any bugs have decided to make their home in the broccoli, this will make them gag and come out gasping for air;0)...
If you are wanting to eat the broccoli fresh, you can put it in a bag and place it in the refrigerator to eat at your leisure.
If you prefer it cooked, follow the instructions now.

Next, boil the florets for 3 minutes...
Cool them down immediately by submerging them in cold water...
Then put them in freezer bags and LABEL the bag.
Always label!
If all else make sure you put the year on the bag for reference!
