Our big meal at our house is lunch. It's when I cook the most and usually we have enough left over for supper (or dinner). I know some people cringe at the thought of eating left overs, but I just can't imagine all that food going to waste. So, when I know I'm going to have a busy/chaotic morning,which seems to be everyday anymore, I try to put lunch in the crock pot the night before. This is another recipe that I made from Gooseberry Patch's Super Easy Slow Cooker Recipes Cookbook It is simple and contains ingredients that you might already have in your pantry. This recipe will be perfect to take to the fields this Spring.
Sweet and Savory Beef Sandwiches
12 oz. can beer or non-alcoholic
1 C. brown sugar
24 oz. (3 Cups) ketchup
3-4 lb. boneless beef roast
6-8 split Kaiser rolls
Optional : banana pepper slices
Stir together beer, sugar, and ketchup in a slow cooker. Add roast and spoon mixture over top. Cover and cook on low setting for 7-8 hours. Remove roast and shred;return to juices in slow cooker. Serve shredded beef on rolls for sandwiches, topped with pepper slices, if desired. Serves 6 to 8.
